pilaf

now, before you all e-mail me telling me that the above is not “pilaf”… I know. But Here’s the thing. Rebecca has this rice with beef (actual pilaf) baby food that she eats. And Elizabeth, sassy thing she is LOVES saying pilaf. So… when I made this rice dish I told her it was pilaf and she cleared her plate. It helps that it’s full of cheese too.

I’m quickly becoming a fabulous instant meal cook on nites Jason is working. I need stuff that I can put on and walk away from, and that come together quickly. here’s how to make this dish- put a package of rice-a-roni “Parmesan chicken” rice on. Then sautee (cook) some chicken breast. PLAIN. No seasoning! When it’s cooked (and nice and browned on outside) set it aside and finish rice. Then, chop up chicken, add to rice, and top with extra (good) Parmesan.

and there you have it. one version of chicken and rice by May. It’s GOOOOOD. and very little to clean up.

3x monday. Oh yeah.

Friends, the mail pixies must have just KNOWN that I so seriously needed some good cheer today or something. Rebecca is busting a move on 4 teeth at once. oy. seriously cranky girl. AND, I’ll say it. Seriously tired mommy who does not want to make any more funny faces or carry any more babies until morning. The blessing with R and her teeth? She sleeps a LOT. Natures way of helping me out I think.

So- when I go to the mail box and find not one, but THREE ‘happy mail’ boxes. WOW. I’m blown away. One of them is an order from Friday night (from ‘peek’), then my monthly kits from Jenni Bowlin and Scarlet Lime. YUMMO!

What am I most excited about? the Elsie “Daisy” goodies. I just (as in, 1hr ago) took these pictures specifically to match that doggie line. Sorry Jake- you’re about to be doused with pink in the ‘ol scrapbook…

 

I couldn’t have asked for a better photo. The shirt she’s wearing totally goes with the yellow in Elsie’s doggie line too. (It’s sponge bob pj’s, by the way- but that’s ok) off to put E to bed and get creating…

Well not too much to say this manic Monday. It’s both one of “those” Mondays and also a great day all at once. So, I’ll focus on the great.

There is so much goodness up at www.fiskarscrafts.comthis month. Project a day, new articles, and fiskars TV of course. I love my job with Fiskars and working on the site content (and with the dream team of designers, of course!) I’m working round-the-clock on summer time merriment for the site and internet in general right now. Mmm yeah. GOOD stuff. I love when I can surf blogs and craft sites and justify to myself that it’s work too. (more on that later!)

Know what else? Every once in a while I’ll be putting one of my own creations on the fiskars site. I shouldn’t show… but I can’t help myself… this project will go up later in the week…

dip or fill…

So, the other day I was making chocolate dipped strawberries. SO easy, and such a pretty thing to present for dessert. Even prettier if you melt a little white chocolate and drizzle lines across, but today I’m going plain.

and, as always there is a little bit left in the chocolate container. Not enough to coat the berries pretty any more, but too much to throw out.

and normally this is where I use the spoon to wipe it onto a left over strawberry and eat immediately. But that’s just so ugly- not shiny and pretty like the others. Plus it tends to fall off. Hmm. What if I cut out the center of strawberry and filled it instead, making a warm, gooey, chocolate filled strawberry?

now we’re in business.
