Who doesn’t like a quick dinner fix that is not only tasty, but VERY diet friendly? Being summer time here means I have dozens of cherry and grape tomato at all times. Recipes that utilize them are always welcome…

1. Chop and brown/cook chicken breast. remove from heat and chop further if desired.
2. Add in a few tablespoons of olive oil into pan and brown up the zucchini. Add some halved cherry tomatoes (or quartered if they’re big). Add a bit more olive oil if desired – you should see some in the bottom of pan, as well as a sprinkle of salt, pepper, onion powder, and garlic powder until seasoned to taste. Throw the chicken back in and just cook until the tomatoes are hot.
3. Spoon over (cooked and drained) pasta – for more diet friendly go heavy on the chicken/veg and LIGHT on the pasta. Sprinkle with parmesan and serve!
note: this would work with other vegetables too – but this is the way I like it. Because you use a bit of olive oil and there isn’t a real “sauce” you save loads of calories. Plus it’s lean, it’s YUM, and it’s perfect for summer.
