Quick dinner {chicken + veg + pasta}

Who doesn’t like a quick dinner fix that is not only tasty, but VERY diet friendly? Being summer time here means I have dozens of cherry and grape tomato at all times. Recipes that utilize them are always welcome…

1. Chop and brown/cook chicken breast. remove from heat and chop further if desired.

2. Add in a few tablespoons of olive oil into pan and brown up the zucchini. Add some halved cherry tomatoes (or quartered if they’re big). Add a bit more olive oil if desired – you should see some in the bottom of pan, as well as a sprinkle of salt, pepper, onion powder, and garlic powder until seasoned to taste. Throw the chicken back in and just cook until the tomatoes are hot.

3. Spoon over (cooked and drained) pasta – for more diet friendly go heavy on the chicken/veg and LIGHT on the pasta. Sprinkle with parmesan and serve!

note: this would work with other vegetables too – but this is the way I like it. Because you use a bit of olive oil and there isn’t a real “sauce” you save loads of calories. Plus it’s lean, it’s YUM, and it’s perfect for summer.

That is Glimmer Mist in Dazzling Diamonds and NEARLY IMPOSSIBLE TO FIND Chalkboard mist in Strawberry shortcake – just to scratch the surface. I bought these goodies at a couple of stores I visited recently and guess what? It’s all for one of you. That’s right – as I shopped I added some goodies I thought a crafty blog reader might enjoy.

UYS is the abbriviation I use when working on Adventures in Scrapbooking: Use your Stash, my new Big Picture class coming this fall.

Can I tell you a secret? I’m having a BLAST working on this!

I use everything I can think of in my stash from old flocked papers I’ve been hoarding saving to themed stickers I purchased (why do I DO that?!) and have never found use for. Pictured above is a sneak peek at a layout in week #4. I’m just wrapping up creating this class – I have about four more layouts to make + the final handout (and a bonus) to create. Know what? I can’t wait for it to start. In fact – I was so excited that I included a layout bonus ‘assignment’ in the pre-class materials.

As far as materials needed to do this class – you can literally use any/all the stash you’ve got on hand. I do my best to show a variety of products – new and old, mixed up and used in all kinds of ways. It will be all my ‘real’ layouts from my own stash being shown, and there will be a lot of material on how to maximize your own stash and hopefully get you thinking about getting stuff used in good ways.

I’m not a “use it and reduce the stash” person – I’m more of a ‘keep things flowing and maximize what you’ve got’ person. We’re gonna have productive scrapbooking fun, that’s for sure. If you have any questions feel free to e-mail me or leave a comment here.

Tuesday checking in. {plus prize link!}

I tell you there is no such thing as a dull moment here in Flaum-ville. We’ve been sick (me and the girls) and Jason wound up working for 5 days straight… well to say my brain is fuzzy would be a gross under-statement. I am looking forward to my first ‘normal’ day in a good long while and I’m glad to share a link to my newest article too.

For now? I’m going to enjoy a full day of family time and hope that the bug we had was the ONLY summer virus we’re going to get!!
