family time off.

I will be back on/around September 9th. I am going off-line, and will be with my sister and family. This morning our grandfather- also known as santa, and teller of many bad jokes passed away. He was probably the best grandpa a girl could wish for.

When combined with the loss of my other grandfather days ago (who I barely knew, but still sad)… well it’s been a very harsh week. The silver lining is getting my sister here for a whole week. Thank you all for understanding I need some time to be not concerned about blogging, e-mailing, etc…

TGIF

Actually really looking forward to this weekend. 100% family time as soon as I get a few more things uploaded to www.fiskarscrafts.com for the big Sept 1 hoopla. The first of the month is always BIG over at fiskars, but this month it’s extra big! I actually sneaked some peeks and blogged about it here.

 

See that fabric? LOVE IT!!! Working on some clothing projects with it that I’ll be sharing real soon. Oh, and sooo much more to come too. Give aways, sneaks to my big picture class, projects… a lot.

But right now I have a date with “gym”… so I’ll be back later.

pony pages…

oh how my life is to be filled with my little pony layouts and projects… oh yes. I’ve got a wee girl who LOVES them, and another learning the ways. I think it’s fun because they were a favorite of mine back in the day- so cool to play with the girls with toys like I used to play with. Anyhow- I had all these photos from Rebecca’s birthday, and of course E got a few presents too…

Mostly all Heidi Grace little birds tale, and the layout was done playing a little game I call “use up the leftover chipboard bits!!!” So many little random hearts and things I had- now they have a home. A fun and quick page, and way to get my mojo up and use some leftover supplies too.

I’m off to finish some sewing layouts and upload even more to fiskars site… have a fun evening!

THE enchiladas

I have nothing against traditional (red sauce) enchiladas. I make and eat those too. It’s just that these are sooo much yummier and it’s one of the first recipes I called my mom for when I moved out on my own. They’re a lot easier than I ever imagined!

  1. Mix: can of cream of chicken soup, 1 1/2 cups sour cream, splash of milk, a nice pinch of salt and pepper into bowl. this is the base of sauce.
  2. put a little (enough to barely cover) in bottom of pan. Then heat some oil on stove and dip corn tortillas in one at a time until soft. Ever tried to roll cold, dry corn tortillas? yeah, that doesn’t work. Trust me on the oil heating!!
  3. Fill tortillas with chicken (breast- pre-cooked and sliced/chunked), cheese (cheddar or taco mix), a small dollop of the sauce mentioned above, and roll up nice and tight. Then put in pan until full.
  4. Add 1/2 cup milk or so to sauce and mix. Then pour over top spreading evenly and top with generous amount of cheese. Bake at 350 until the top starts getting golden brown.

Note: you can totally do this a day ahead and keep in fridge.

You’ll need:

  • 1 can cream of chicken soup
  • milk
  • sour cream
  • salt & pepper
  • Chicken breast (cooked and sliced)
  • corn tortillas
  • oil (for heating tortillas)
  • cheese
  • OPTIONAL: Chilies for sauce or to put inside enchiladas. Jason likes jalapenos, my mom likes green chilies, I prefer NONE.
